It’s Eternal Riff #5!

For those of you who’ve been here a while, you might recall we’re working on a never-ending collaboration with Brian Johnson from Better Cocktails at Home. Basically, we started with a simple Tommy’s Margarita, and we’ve passed this cocktail back and forth, each changing one thing each time.

This cocktail was the first time we changed the base spirit – though we stayed in the same “family tree” – we went from Tequila to Mescal. Check out the video below!

It’s the next Riff! This time we’re mixing up the base spirit and bringing in a little heat.

Ingredients

  • 1 1/2 oz Mezcal
  • 3/4 oz Lime Juice
  • 3/4 oz Pineapple Sriracha Syrup
  • 2 tbsp Rosemary Salt

Pineapple Sriracha Syrup

  • 1 ea Pineapple
  • 2 cups Water
  • 2 cups Sugar
  • 1/4 oz Sriracha (to taste)

Rosemary Salt

  • 2 tbsp Dried Rosemary
  • 1 cup Kosher Salt

Instructions

  • Rim a coupe or martini glass with rosemary salt by rubbing a piece of lime on the edge and carefully dipping the edge of the glass in the prepared rosemary salt mixture
  • Add mescal, lime juice and pineapple-sriracha syrup to a cocktail shaker
  • Add ice and shake well
  • Fine-strain into the prepared cocktail glass

Pineapple Sriracha Syrup

  • Combine all ingredients except sriracha in a medium sized saucepan
  • Bring to a boil, reduce the heat to a simmer and allow to simmer until it has reduced by half
  • Remove from the heat and strain the mixture to remove pineapple pieces
  • Add sriracha and stir well to combine
  • Chill before using

Rosemary Salt

  • Grind rosemary in a spice grinder until very fine
  • Combine rosemary and salt
